Cheesy Lasagna Roll-Ups Recipe
Ingredients
- 8-10 lasagna noodles, cooked and drained
- 1 cup ricotta cheese
- 1 egg
- 1 ½ cups shredded mozzarella cheese (divided)
- 1/2 cup grated Parmesan cheese
- 2 cups marinara or pasta sauce
- 1/2 pound ground beef or Italian sausage (optional)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley (for garnish)
Instructions
- If using meat, brown the ground beef or sausage in a skillet, season with salt, pepper, and Italian seasoning. Drain and set aside.
- In a bowl, mix ricotta cheese, egg, 1 cup mozzarella, Parmesan, salt, and pepper.
- Lay out each cooked lasagna noodle on a clean surface. Spread a spoonful of the cheese mixture down each one, add a little cooked meat (if using), then roll them up gently.
- Pour 1 cup of marinara sauce into the bottom of a baking dish. Place each roll-up seam-side down into the dish.
- Top with the remaining sauce and sprinkle with the rest of the mozzarella cheese.
- Cover with foil and bake at 375°F (190°C) for 20 minutes. Remove foil and bake for another 10 minutes, until bubbly and golden on top.
- Let cool slightly before serving. Top with fresh basil or parsley if you’d like!
Helpful Tips That Make a Difference
- Boil a few extra noodles in case some break while cooking—they’re fragile!
- Use a piping bag or zip-top bag with the corner snipped to neatly fill the noodles (less mess, more fun).
